The Genetic Distinction

Why Full Blood Wagyu Is Different

Most Wagyu sold in the United States is American Wagyu — cattle crossbred at 50% or higher with Angus or commercial breeds. That produces better marbling than conventional beef, but it is not Full Blood.

Full Blood Wagyu carries 100% verified Japanese Wagyu genetics. The animal's ability to accumulate intramuscular fat is fully expressed. BMS scores are higher. Marbling is more uniform. The eating experience is categorically different.

Hawks Hill Ranch raises only Full Blood Wagyu. We do not blend product. When production is insufficient for demand, we allocate rather than substitute.

Simply the Best Beef I’ve Ever Had — Hawks Hill Ranch

I’ve been a customer of Hawks Hill Ranch since what I believe was their very first year, and I can say without hesitation that this is the finest beef I’ve ever eaten. Once you’ve experienced their Wagyu, it’s incredibly difficult to go back to anything else. Nothing quite compares.

What makes Hawks Hill Ranch so exceptional is their commitment to raising 100% fullblood Japanese Wagyu right here in Wyoming. This isn’t your typical American Wagyu crossbreed. It’s the real deal, and the quality is evident in every single cut.

What I particularly appreciate is the balance they’ve achieved. Traditional Japanese Wagyu is famous for its extraordinary marbling, but that richness can sometimes make it difficult to enjoy a full steak. Hawks Hill Ranch has found what I consider the sweet spot: incredible marbling, tenderness, and that unmistakable buttery Wagyu flavor, but with a balance that allows you to truly enjoy an entire meal. It’s an exceptional eating experience.

I typically purchase a quarter steer every other year, and it’s become something I genuinely look forward to. From the steaks to the roasts to the ground beef, the quality is consistently outstanding.

I’ve enjoyed some wonderful beef over the years, but Hawks Hill Ranch has completely reset my expectations of what great beef should taste like. It’s the kind of product that spoils you for everything else.

I’m proud to have been one of their earliest customers, and I can’t recommend them highly enough. If you appreciate truly exceptional beef, Hawks Hill Ranch is in a class of its own.

Five stars, without question.

Absolutely Outstanding Wagyu And A Wyoming Business Worth Supporting!

We stumbled upon an article about Hawks Hill Ranch in the Cowboy State Daily a few years ago, and we have been ordering from there ever since. We absolutely love their Wagyu! The marbling is exactly what you would expect from top-quality Wagyu, and the flavor and quality speak for themselves.

When I mentioned to Kelly and Tania that my husband and I would be in the Cody area, we were hoping to stop by and shop in person. They kindly recommended a tour of the ranch, which we were absolutely thrilled to do! We were so impressed by what we saw. The cows were healthy, the operation was exceptionally clean and well-maintained, and it was clear that a tremendous amount of care goes into everything they do. The staff is fabulous and genuinely cares about the well-being of their animals and the quality of the product they provide.

It is refreshing to see a business that takes so much pride in how their animals are raised and the product they bring to their customers. The tour gave us an even greater appreciation for the care, hard work, and dedication behind the beef we have come to love.

We love supporting Wyoming businesses, and Hawks Hill is exactly the kind of business we are proud to support. We cannot recommend them enough.
