Why Full Blood Wagyu Is Different

Most Wagyu sold in the United States is American Wagyu — cattle crossbred at 50% or higher with Angus or commercial breeds. That produces better marbling than conventional beef, but it is not Full Blood.

Full Blood Wagyu carries 100% verified Japanese Wagyu genetics. The animal's ability to accumulate intramuscular fat is fully expressed. BMS scores are higher. Marbling is more uniform. The eating experience is categorically different.

Hawks Hill Ranch raises only Full Blood Wagyu. We do not blend product. When production is insufficient for demand, we allocate rather than substitute.
